(2-3 people + baby + extra)
Ingredients
* 10oz box of couscous
* 1 medium tomato
* 1 small cucumber
* parmesan (or mozzarella--if used, it can be shredded or in cubes)
* fresh basil (3-5 small leaves)
* sea salt
* grapeseed oil (or olive oil)
(Option: any vegetable, or even fruit, can be substituted)
(Option: add chicken kabobs if baby is old enough)
Step 1: Boil about 2 cups of water. Remove water from heat; add couscous. Let sit, stirring (fluffing) every 30-60 seconds or so. Fluff for about 5-10 minutes.
Step 2: Dice the tomato. Dice the cucumber. (Skin tomato and cucumber if appropriate.) Add tomato and cucumber to couscous; mix.
Step 3: Drizzle oil over couscous--just enough to cover couscous and veggies/fruits. If your baby is old enough, add a couple pinches of sea salt, to taste. (You can always salt your own bowl.)
Step 4: Cut basil; add to couscous; mix.
Step 5: Sprinkle parmesan over couscous, enough to flavor; mix. (Make sure couscous has cooled a bit before adding cheese, or it will melt too fast.)
